Our favourite local artisan bakery has come up with a tasty and super simple recipe to use up your leftover soft white tin loaf. Jam-packed with fresh summer fruits, this Summer Pudding, has been refined by Aaron Patterson, Michelin Star Chef of the bakery&#8217;s sister business, <a href="https://www.hambletonhall.com/" target="_blank" rel="noreferrer noopener">Hambleton Hall</a> on Rutland Water (he boasts the longest retained single star in the UK, which he&#8217;s held since 1982) and it&#8217;s is a colourful showstopper for when you&#8217;ve got guests heading over. Just remember to start your prep the day before so it has time to chill in the fridge overnight.

Prep: 20 mins, plus 4 hours or overnight to chill in the fridge

<li>8cm Ring Mould (5cm high)</li>

<li>150g Strawaberries</li>



<li>150g Blueberries</li>



<li>50g Raspberries</li>



<li>50g Recurrants</li>



<li>50g Caster Sugar</li>



<li>Vanilla Crème Fraîche</li>



<li>Fresh Mint</li>
</ul>



<h2 class="wp-block-heading" id="h-method">METHOD</h2>



Simmer berries and sugar for 10 mins, then drain the fruit, keeping the liquor.



Thinly slice the bread, discarding crusts, and cut two discs to fit your mould and rectangles to line the inside of the mould.



Dip the bread into the fruit liquor and use it to line the bottom and sides of the mould.



Fill the lined mould with the drained fruit.



Add the top disc and press it down with a weight.



Leave in the fridge for 4 hours or overnight. 



Remove from the mould onto a plate and pour over the remaining liquor.



Serve with fresh berries, a spoon of vanilla crème fraîche and a sprig of mint.
